Quick DInner: Fiesta Rice Bowls

Okay, so I love to cook. I love to create food and share it with my loved ones. I can make desserts, salads, and main dishes. I binge watch food network and collect cookbooks. However, I have a confession. Some nights after work I don’t like to make dinner. My favorite night is when my husband makes his specialty which is burgers. But since we try to only eat hamburgers once a week that means that we need to find other options.

However, I have been very interested in the Meal Prep fascination. Just typing in Meal prep into the search bar and you will be given tons of options usually eating the same dish every night a week. Which I don’t find appealing. Recently I came across another way. Having ingredients prepped and ready to use then just incorporating them into a dish.

So the other night I came up with this following recipe and it was so fast and tasty I thought I’d share it with you.img_3623

Fiesta Rice Bowls
2 cups of brown rice
3 cups of water.

Cook rice according to the instructions, I used my rice cooker and for once my brown rice was cooked perfectly.

Leftover steak, I made steak on Sunday, just baked it for about 20 minutes at a 425-degree oven. I cut it into cubes. I made steak rub which was equal parts Lawery’s seasoning, chili powder, brown sugar. Add salt and pepper to taste. And some smoked paprika. Before baking the steak sprinkle with rub.
½ half cup bell peppers. chopped
1 can of corn
1 can of black beans
2 tablespoons of Lemon juice
2 tablespoons of honey,

Put the bell peppers in a hot saute pan until blistered, add the steak, corn, black beans, lemon juice and honey. Cook til until heated through and serve on rice. You can add cheese, sour cream, salsa or guacamole if you want but it is just as tasty without. And it took about 15 minutes to cook and get on the table. Jman loved this.
